Linguine With Garlic Shrimp And Mushrooms
- 1 lb. linguine or spaghettini
- 1/4 cup extra virgin olive oil
- 1/4 lb. salted butter (1 stick)
- 8 oz. sliced white mushrooms
- 1 Tbsp. dried oregano
- 1 Tbsp. dried basil
- 1 Tbsp. Zatarain's Creole Seasoning* (to taste)
- 1 lb. medium shrimp, raw and peeled
- 1/3 cup parmesan cheese, shredded or grated.
- *Available in most supermarkets.
- Cook pasta in boiling salted water, until al dente.
- While pasta is cooking, in a large heavy skillet over medium heat, add olive oil and butter. Add mushrooms, oregano and basil. Saute mushrooms until soft. Add shrimp and Creole seasoning. Cook shrimp until just opaque, turning once as necessary.
- Drain pasta. Add shrimp mixture to hot pasta. Toss with parmesan cheese. Serve immediately.
