Braised Red Cabbage With Apple Cider And Carraway
- 4 slices of bacon, cut into small pieces OR 3 tbsp butter
- 1 tbsp extra virgin olive oil
- 2 cups chopped onion
- 1 tbsp caraway seeds
- 2 cups apple cider
- 1 large reg cabbage, halved, cored, and sliced 1/2 inch thick
- 1 tbsp maple syrup
- 2-4 tbsp of red wine or cider vinegar (to taste)
- 1. If using bacon, saute until it begins to crisp over medium heat. Remove bacon and set aside and crumble. Then pour off all but 3 tbsp of fat and add in olive oil or butter to about 4 tbsp of fat.
- 1. If not using bacon, melt butter in olive oil
- 2. Add in onion and caraway seeds and cook until onion is translucent (~5min).
- 3. Add in apple cider and 1/2 tsp salt and raise heat to medium high.
- 4. Add in cabbage, maple syrup, bacon, and 1 cup of water.
- 5. Bring to boil and reduce heat and simmer, partially covered, stirring occasionally, for ~30-45 min (or until cabbage is tender)
- 6. Simmer uncovered until liquid is syrupy.
- 7. Season with vinegar, salt and pepper.
