Braised Red Cabbage With Apple Cider And Carraway

  1. 1. If using bacon, saute until it begins to crisp over medium heat. Remove bacon and set aside and crumble. Then pour off all but 3 tbsp of fat and add in olive oil or butter to about 4 tbsp of fat.
  2. 1. If not using bacon, melt butter in olive oil
  3. 2. Add in onion and caraway seeds and cook until onion is translucent (~5min).
  4. 3. Add in apple cider and 1/2 tsp salt and raise heat to medium high.
  5. 4. Add in cabbage, maple syrup, bacon, and 1 cup of water.
  6. 5. Bring to boil and reduce heat and simmer, partially covered, stirring occasionally, for ~30-45 min (or until cabbage is tender)
  7. 6. Simmer uncovered until liquid is syrupy.
  8. 7. Season with vinegar, salt and pepper.
