Chicken Parmesan
- 1 egg, beaten
- 4 chicken breasts (skinless and boneless)
- 1/2 c. Italian seasoned dry bread crumbs
- 2 Tbsp. margarine
- 2 c. Prego spaghetti sauce
- 1/2 c. shredded Mozzarella cheese
- 1 Tbsp. grated Parmesan cheese
- 1 Tbsp. fresh parsley or 1 tsp. dried parsley flakes
- 4 c. hot, cooked spaghetti (about 8 oz. dry)
- Dip chicken in egg; on waxed paper coat chicken with crumbs. In 10-inch skillet over medium heat, in hot margarine, cook chicken 10 minutes or until browned on both sides.
- Remove; set aside.
- In same skillet, heat spaghetti sauce to boiling.
- Add chicken. Reduce heat to low.
- Cover; cook 5 minutes until chicken is no longer pink.
- Sprinkle with cheeses and parsley.
- Cover; cook until cheese is melted.
- Serve with spaghetti.
