Eggplant Vegetable Hotdish
- 1 egg plant
- 2 tsp. fresh lime juice
- 1/2 C. Panko Italian Style bread crumbs
- 1 T. Extra Virgin Olive Oil
- 10-12 green beans
- 2 cherry tomatoes, cut into pieces (optional)
- 1-2 T. almonds
- 1/4 C. melted butter
- Peel and cut eggplant into 1/2 inch thick slices.
- Dip egg plant into lime juice, EVOO and bread crumbs. Fry or broil in EVOO, turning once, until browned 8-10 min.
- Place green beans in saucepan in salted water and simmer for 5 min. Roast almonds in fry pan until slightly browned. Drain beans and place in fry pan with almonds and add cherry tomatoes.
- Heat through for about 4 min.
- Place in serving dish and cover with melted butter.
- Serve vegetables with your favorite meat.
- Meat suggestions: Pork tenderloin, lamb or beef steak.
