Eggplant Vegetable Hotdish

  1. Peel and cut eggplant into 1/2 inch thick slices.
  2. Dip egg plant into lime juice, EVOO and bread crumbs. Fry or broil in EVOO, turning once, until browned 8-10 min.
  3. Place green beans in saucepan in salted water and simmer for 5 min. Roast almonds in fry pan until slightly browned. Drain beans and place in fry pan with almonds and add cherry tomatoes.
  4. Heat through for about 4 min.
  5. Place in serving dish and cover with melted butter.
  6. Serve vegetables with your favorite meat.
  7. Meat suggestions: Pork tenderloin, lamb or beef steak.
