Thai Chicken Balls
- 1 kg chicken mince
- 1 cup (90g) fresh breadcrumbs
- 4 spring onions, sliced
- 1 tablespoon ground coriander
- 1 cup (50g) chopped fresh coriander
- 3 tablespoons sweet chilli sauce
- 1-2 tablespoons lemon juice
- 2 tablespoons oil
- 1) Pre heat oven to 200c
- 2) Mix the mince and breadcrumbs in a large bowl
- 3) Add the spring onions, ground coriander, fresh coriander chilli sauce and lemon juice and mix well
- 4) Using damp hands, form the mixture into evenly shaped balls that are either small enough to eat with your fingers or large enough to use as burgers
- 5) Heat the oil in a large non-stick frying pan and cook the chicken balls over high heat until browned all over
- 6) Drain well on paper towels and then place them on a baking tray and bake until cooked through (small chicken balls will take ~5 minutes to cook and larger ones will take 10-15 minutes)
