  1. 1. Thaw phyllo dough overnight in the refrigerator, if frozen.
  2. 2.Roll out your defrosted phyllo sheets, and cut a 3-inch wide strip all the way along lengthwise. Immediately cover this strip with Saran Wrap, and wrap up the remaining phyllo dough and refrigerate it.
  3. 3.Combine the cheese, egg, and parsley.
  4. 4. To assemble the triangles, melt the butter. Line cookie sheets with parchment paper and cover with two sheets of Saran Wrap.
  5. 5. Place one sheet of phyllo on a flat surface and brush with melted butter.
  6. 6. Attach to this sheet with another sheet, buttering the top sheet.
  7. 7. To assemble the triangles, melt the butter.
  8. 7. Spoon a teaspoon of filling onto the end of each strip and form a triangle, by folding the right hand corner to the opposite side, as you would a flag, brushing with melted butter all the way.
  9. 8. Place the triangles on a cookie sheet lined with parchment paper, and immediately cover with Saran Wrap, and refrigerate until you are ready to bake.
  10. Be sure to cover all phyllo with Saran Wrap
  11. 9. Bake the triangles in a preheated 350o F. oven until golden brown, about 10 minutes.
