Spirulina Bread With Natural Fermentation
- 1 400 g bread - 200 g = 100%
- 100% wheat flour
- 1% spirulina powder
- 5% organic sugar
- 60% cold filtered water
- 45% mature natural yeast (Andreu?)
- 2% pink Himalayan sauce
- Mix flour with sugar and spirulina
- Make hole in center and fill w water.
- Knead with finger tips.
- Dissolve/Distribute natural yeast in mixture well.
- Add remaining water. Continue working dough.
- Add salt and knead for about 3 min.
- Cover for 4-5 hrs or until it doubles in volume.
- Scrapescoop out of bowl onto smooth surface
- Press the dough into a rectangle that is as long as the loaf pan and slightly less than twice as wide as it is long. At the narrow end, roll the dough tightly, jelly-roll style. Pinch the ends and seam to seal, turning the ends under if necessary. (
