Baby Bow Tie And Walnut Pasta Salad
- 1 1/2 cups baby bow tie pasta
- 1 tbsp vegetable oil
- 1\ onion chopped
- 3/4 cup chopped walnuts
- 1/2 cup chopped sweet green pepper
- 2 tbsp olive oil
- 1 Tbsp lemon juice
- 1/4 tsp salt
- pinch pepper
- 2 tbsp chopped coriander
- 1 cup finely copped cherry tomatoes
- Toast 1/2 cup pasta. (I prefer using the microwave for toasting)spread pasta on a microwave safe plate. Microwave on high checking and tossing in 1 minute intervals until golden.
- In saucepan of boiling salted water cook toasted and remaining pasta until al dente, 7 - 8 min. Drain and rinse. Set aside in large bowl.
- In skillet heat vegetable oil over medium heat: cook onion, stirring often until softened about 2 min. Add walnuts cook 2 min stir in green pepper & cook 1 more min. Pour over pasta. Add chopped coriander. Toss to combine.
- In small bowl whisk together oilive oil, lemon juice, salt & pepper pour over pasta mixture. Toss to combine.
- Garnish with cherry tomatoes and coriander sprigs.
