Wonderfully Green Chickpea Dip
- 2 cans chickpea (garbanzo beans), drained and rinsed (or 3 cups cooked chickpeas)
- 2-3 garlic cloves
- 1/2 cup parsley
- 1/3 cup mint leaves
- dash cayenne pepper
- 1/2 tsp ground cumin
- 1/2 tsp of salt (or to taste)
- 1/2 cup each olive oil and lemon juice (may need less, depending on the beans)
- Mint and parsley for garnish
- In a food processor, combine ingredients up to oil and lemon juice. Turn on processor and mix until ingredients are chopped finely. Mix together oil and lemon juice in a liquid measuring cup with spout, and with food processor on, pour in the oil/lemon juice mixture slowly until the dip has a smooth consistency, but is not too runny. Place in a serving bowl. If you have time, puree some parsley with olive oil, and swirl this mix into the top of the dip. Serve with raw veggies of your choice and pita chips.
