Sausage Marinara
- 1 lb of left-over Italian Sausage (poultry if fine, hot is best).
- 1 Tbs Olive Oil
- 1 Small Onion
- 2-3 Garlic Cloves, Diced
- 1 Pepper (Green or Red), I've even used left-over peppers & onions.
- 1 Large Can Whole Tomatoes
- 1 Medium Can of Diced Tomatoes
- 1 Medium Can of Tomato Paste
- 1 tsp Onion Powder
- 2 tsp Oregeno
- 1 tsp Basil
- 1/2 tsp Thyme
- 1/4 tsp Marjoram
- 1/4 tsp Crushed Rosemary
- 1/4 tsp Red Pepper
- 2 tsp brown sugar
- 1/4 tsp baking soda
- Your Favorite Pasta
- Saute garlic, onions & peppers in a medium sized Dutch Oven with Olive Oil. I like to cut the onion & pepper in larger chunks. Allow them to get soft. Dice up the sausage and toss it in. Let the mixture heat up on medium heat.
- Add tomato products. Add 1 - 2 cans of water with the paste. Mix Well.
- Add spices & sugar. Bring to a boil & reduce heat. Add Baking Soda (sometimes a touch more of soda is needed to take away the bitterness).
- Let simmer for 30 - 45 minutes. Heat up some pasta and go to town.
