Jennifer'S Tortilla Soup
- 3 T olive oil
- 4 corn tortilla, torn into
- spoon sized pieces
- 5 garlic cloves, minced
- 1 large oion pureed
- 3 large, tomatoes, peeled &
- pureed
- 1/4 C canned tomato puree
- 1/4 C fresh lime juice
- 1 T chili powder
- 1 t ground cumin
- 1 T chipolte chilies in adobo
- sauce
- 1/2 C fresh cilantro leaves
- chopped
- 8 C chicken stock
- salt & pepper to taste
- Garnish
- 1 skinless, boneless chicken
- breast
- 1 ripe avacado, peled, chopped
- 1 C shredded cheddar cheese
- crispy tortlla chips, cut into
- strips like noodles
- Puree tomato and onion togeatherin blender or food processor.
- Heat oil i a large pot. sautetorilla pieces with garlic until tortillas soften. Add the pureed oion and tomato and ring to a boil. Add canned tomato puree. lime juice, chili powder, cumin, chipotle chiles, and chicken stock. Simmer 30 minutes.
- Serve with garnish.
