- Chicken & Whole Wheat Penne Pasta Salad
- This is a fast & easy low-carb friendly recipe.
- 4 cups chopped cooked chicken breast
- 2 large cloves garlic, minced
- 1 cup roasted, chopped red peppers from jar
- 1/4 cup chopped fresh basil
- 1 cup cooked whole wheat penne pasta
- 4 tablespoons freshly grated Asiago
- Vinaigrette Dressing:
- 6 tablespoons extra virgin olive oil
- 3 tablespoons balsamic vinegar
- 1/2 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- Combine all ingredients for the Vinaigrette dressing in a screw top jar. Cover and shake until thoroughly mixed. Set aside.
- Combine first 5 ingredients, chicken through pasta, in a medium bowl. Add the vinaigrette dressing; mix well. Refrigerate for 1 hour. Sprinkle grated Asiago over salad and serve. Makes 6 Servings.
