  1. Chicken & Whole Wheat Penne Pasta Salad
  2. This is a fast & easy low-carb friendly recipe.
  3. 4 cups chopped cooked chicken breast
  4. 2 large cloves garlic, minced
  5. 1 cup roasted, chopped red peppers from jar
  6. 1/4 cup chopped fresh basil
  7. 1 cup cooked whole wheat penne pasta
  8. 4 tablespoons freshly grated Asiago
  9. Vinaigrette Dressing:
  10. 6 tablespoons extra virgin olive oil
  11. 3 tablespoons balsamic vinegar
  12. 1/2 teaspoon Dijon mustard
  13. 1/2 teaspoon salt
  14. 1/2 teaspoon freshly ground pepper
  15. Combine all ingredients for the Vinaigrette dressing in a screw top jar. Cover and shake until thoroughly mixed. Set aside.
  16. Combine first 5 ingredients, chicken through pasta, in a medium bowl. Add the vinaigrette dressing; mix well. Refrigerate for 1 hour. Sprinkle grated Asiago over salad and serve. Makes 6 Servings.
