Pork And Cannellini Stew
- 5-7 Boneless Country Pork Ribs (trim some fat, you can also brown)
- *2 cups of dry Cannellini beans.
- *1.5-2C of Water w/ a bullion cube. (Knorr, chicken, etc)
- *2 cans of diced tomatoes
- *3 cloves garlic chopped
- *12 basil leaves chopped
- *sprinkle of some oregano, pepper and red pepper flakes if you want.
- Toss it all in a crock pot, including the dry beans, unsoaked, etc. You have to do nothing extra with them, except rinse them and cook on low for about 5 hours, then I turn up to high for the last hour.
- The pork should mix right into the beans. Top with fresh basil, a little sea salt if needed and parmesan. Drizzle of olive oil for fun wouldn't hurt!
- Note- I've made this with pork chops too and I'll be trying it with pork loin next.
