Chicken Primavera
- 2 lb. boneless, skinless chicken breasts
- 4 (16 oz.) cans Italian stewed tomatoes
- 1 large jalapeno pepper, diced
- 2 Tbsp. olive oil
- 6 large fresh mushrooms, sliced thin
- 1 medium onion, diced
- 1 (16 oz.) pkg. shredded Mozzarella cheese
- 2 Tbsp. cornstarch
- 4 to 6 cloves fresh garlic, diced
- 2 Tbsp. Italian seasonings
- 4 servings angel hair pasta
- Preheat oven to 350u0b0.
- Place rack in middle of oven.
- Cut chicken into thin 1 1/2-inch strips.
- Spread olive oil evenly on a 9 x 13-inch baking pan.
- Place chicken in pan.
- Sprinkle on 1 tablespoon Italian seasoning.
- Dice garlic cloves and sprinkle over chicken, too.
- Bake for 20 minutes.
