Pineapple Banana Loaf
- 3 cups (750 ml.) all-purpose flour
- 2 cups (500 ml.) granulated sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1 cup (250 ml) crushed pineapple, undrained
- 3 eggs
- 1 1/2 cups (375 ml) canola oil
- 2 cups (500 ml.) mashed ripe bananas (about 5)
- 2 tsp. vanilla extract
- Combine first five dry ingredients (flour, sugar, baking powder and soda, and salt).
- Beat remaining ingredients together in a bowl until well blended. Add dry ingredients, stirring until thoroughly combined.
- Spread into 2 greased 8 1/2''X4 1/2'' (1.5 L) loaf pans, dividing evenly.
- Bake at 350F/180C for 60-70 minutes, or until a toothpick inserted in centre comes out clean. Cool 15 minutes in pan, and then remove to rack and cool completely.
- Tip: Stir 1 cup (250 ml) chopped nuts into batter if desired. Macadamia or Brazil nuts are nice.
