Tomato Manicotti

  1. Pour half of the tomato sauce into a 2-quart shallow baking dish and set aside. In a large bowl, combine beef, parsley, minced onion, oregano, marjoram, cottage cheese, and garlic. Mix with hands until combined. Divide mixture equally among the the 8 manicotti shells and carefully stuff the mixture into shells from each end. Place the shells in pan and pour remaining tomato sauce over the shells. Cover dish with foil and bake at 350' for 30 minutes. Remove and sprinkle on jack and Parmesan cheese. Return to oven, uncovered, for 10 minutes; serve.
