Bleu Summer Salad
- Salad:
- 1 Bag Baby Spring Mix
- 1/2 cup Sliced Almonds
- 1/2 cup dried cranberries
- 1 cup Bleu Cheese (preferably crumbled danish)
- 1 Red Onion (sliced thinly)
- Dressing:
- 4 oz seedless raspberry preserves
- 1 oz Red Wine Vinegar
- 4 oz Extra Virgin Olive Oil
- 1/4 t dried basil
- 1/4 t dried oregano
- 1/4 t dried thyme
- To Taste: Kosher salt & Black pepper
- Garnish:
- Black & White toasted sesame seeds
- Mix together in a bowl Bleu cheese, cranberries, almonds and sliced onions. Reserve for 10 minutes.
- In a seperate bowl whisk together all ingredients for dressing. Whisk until emulsified & Thick. (Add more olive oil if too thick)
- Combine spring mix with reserved Bleu mixture, and toss lightly with dressing. Platter, and garnish lightly with sesame seeds.
