Baked Salmon With Vegetables And Herbs

  1. Preheat oven to 450u0b0.
  2. Fill large pot with water to depth of 1 inch.
  3. Place steamer rack in pot and bring to boil.
  4. Place potatoes and carrots on steamer rack.
  5. Cover pot and steam for 5 minutes. Add green beans and steam 5 more minutes.
  6. Transfer vegetables to bowl.
  7. Add olive oil, soy sauce, leeks, green onions, dill and basil; toss well.
  8. Season with salt and pepper.
  9. Place 4 large foil sheets on baking sheet.
  10. Spray foil with vegetable oil spray. Place 1 salmon fillet on each foil sheet.
  11. Season with salt and pepper.
  12. Spoon vegetable mixture evenly over salmon.
  13. Top each with 1 tablespoon butter.
  14. Wrap foil around salmon and vegetable and seal.
  15. Bake until fish is opaque, about 14 minutes.
  16. Transfer salmon to plates and discard foil.
  17. Serves 4.
