Fruitcake Cookies
- 1 3/4 cups granulated sugar
- 1/2 cup butter
- 3 eggs, beaten
- 3 cups flour
- 1 teaspoon cinnamon
- 1 teaspoon allspice
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 2 lbs. chopped dates
- 1/2 lb chopped candied cherries
- 1/2 lb. chopped candied pineapple
- 1 lb. chopped pecans
- 1 Tablespoon pure vanilla extract
- 1/2 teaspoon soda
- 1/4 cup warm water
- Cream the sugar and butter. Add the eggs.Mix sifted dry ingredients. Sift 3/4 cup of dry ingredients over fruit & nuts to coat. Mix vanilla, fruit and remaining dry ingredients in with the creamed mixture. Add soda dissolved in warm water. Drop by teaspoonsful onto a greased cookie sheet. Bake at 375 degrees for 10 to 12 minutes.
