Chicken Breast Divan
- 4 boneless chicken breasts
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 2 Tbsp. olive or salad oil
- 2 Tbsp. butter or margarine
- 3 Tbsp. green onion or chives
- juice of 1 lemon
- 3 Tbsp. chopped fresh parsley or 1 Tbsp. dry flakes
- 2 Tbsp. Dijon mustard
- 1/4 c. chicken broth
- Pound chicken between waxed paper.
- Sprinkle with salt and pepper.
- Melt butter, mix with olive oil in micro safe dish.
- Add chicken.
- Coat both sides.
- Microwave 3 minutes on High.
- Reset 1 minute.
- Turn chicken and microwave 3 more minutes on High or until chicken is tender.
- Mix chives, onions, lemon juice, mustard and parsley.
- Microwave 1 minute on High.
- Add juice from chicken and broth.
- Stir until smooth and pour over chicken.
- Serve over cooked rice or noodles.
