Quinoa & Spinach Curry
- One onion, finely chopped
- Two cloves garlic, crushed
- One tablespoon curry powder
- Cup green lentils
- Cup quinoa
- Spinach (fresh or frozen) large bag (approx 400g) fresh or equivalent frozen
- Salt and pepper
- Oil
- Thinly slice the onion and crush the garlic and using a large saucepan, fry them in about a table spoon of oil until just softened, add the curry powder, lentils and quinoa and cook for a few minutes. Add the spinach and allow to wilt down or melt and add two cups of water. Stir through and put on a lid and simmer for about ten mins until the spinach is all cooked. Add another cup of water and simmer for a further ten mins until the quinoa and lentils are cook. You can tell the quinoa is cooked when the grain begins to unravel and the lentils are al dente. Add more water if it looks like its drying out but the end product should be a dense slop. Add salt and pepper to taste and serve with whatever you fancy.
