Dutch Apple Rice Pudding

  1. In medium bowl, combine rice, applesauce, 1/2 of sugar, 2 tablespoons
  2. of butter, raisins and vanilla; set aside.
  3. In another
  4. bowl, combine cracker crumbs and coconut with remaining sugar
  5. and 4 tablespoons butter; mix well.
  6. In a buttered 2-quart casserole,
  7. sprinkle
  8. 3/4
  9. cup
  10. of the crumb mixture. Pour
  11. in all
  12. of
  13. the
  14. rice
  15. mixture; sprinkle with remaining crumbs.
  16. Bake in a preheated 350u0b0 oven for 25 minutes or until top
  17. is
  18. golden. Serve
  19. warm
  20. with apple slices or ice cream. Makes 8 servings.
