Dutch Apple Rice Pudding
- 3 c. hot cooked rice
- 2 c. applesauce
- 3/4 c. firmly packed brown sugar
- 6 Tbsp. margarine, melted
- 1/4 c. raisins (optional)
- 1 Tbsp. pure vanilla
- 1 c. graham cracker crumbs
- 1/2 c. shredded coconut
- apple slices for garnish
- In medium bowl, combine rice, applesauce, 1/2 of sugar, 2 tablespoons
- of butter, raisins and vanilla; set aside.
- In another
- bowl, combine cracker crumbs and coconut with remaining sugar
- and 4 tablespoons butter; mix well.
- In a buttered 2-quart casserole,
- sprinkle
- 3/4
- cup
- of the crumb mixture. Pour
- in all
- of
- the
- rice
- mixture; sprinkle with remaining crumbs.
- Bake in a preheated 350u0b0 oven for 25 minutes or until top
- is
- golden. Serve
- warm
- with apple slices or ice cream. Makes 8 servings.
