Bulgar Salad
- 4 C Garbanzos
- 4 C water +
- 1/4 tsp Salt
- Pepper
- 2 C Bulgar wheat
- 4 tbs Olive oil
- 1 1/2 C red onion, chopped
- 4 cloves garlic, minced
- 2 tbs grated ginger
- 2 tomatoes chopped
- 2 tsp + cumin
- 1 tsp + coriander
- 1/4 tsp cayenne pepper
- 1/2 tsp turmeric
- 4 minced green onions
- 1 cup parsley
- 2/3 c cilantro
- 1/2 c lime juice
- Combine oil, onion, ginger and garlic in skillet. Saute for 5 min.
- Add tomatoes and let evaporate. Add spices and cook for 1 min
- Add garbanzos, bulgar and water, simmer until water evaporates.
- Remove from heat
- Add lime, green onion, parsley and cilantro.
