Jubilation Bars

  1. Preheat oven to 350 degrees. Grease and flour 10x15 pan. Stir the first six ingredients together in a bowl. Beat sugar, oil, eggs, lemon zest, and vanilla together. Mix in zucchini and sweet potato, and then add dry ingredients and nuts, mixing well. Spread mixture into pan and bake 20-30 minutes, or until they test done with a toothpick. Cool completely.
  2. Cream butter and sugar together with electric mixer. Add 1 cup of sugar and the orange juice, and beat until creamy. Add remaining sugar. Beat in lemon juice, orange extract, and grated zest. Add the sherry and beat until smooth. Spread on bars. Cut into bars once icing is set.
