Jubilation Bars
- BARS:
- 2 cups alll purpose flour
- 2 teaspoons cinnamon
- 1/4 teaspoon nutmeg
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup sugar
- 1/2 cup brown sugar
- 1 teaspoon grated lemon zest
- 3/4 cup vegetable oil
- 3 eggs
- 1 teaspoon vanilla
- 1 1/2 cups grated sweet potato (peeled)
- 1 1/2 cups grated zucchini
- 1 cup toasted chopped pecans
- ICING:
- 5 tablespoons butter
- 3 cups powdered suger
- 3 tablespoons FRESH orange juice
- 1 teaspoon FRESH lemon juice
- 1/2 teaspoon orange extract
- 1-2 teaspoons grated orange zest
- 2 tablespoons dry sherry
- Preheat oven to 350 degrees. Grease and flour 10x15 pan. Stir the first six ingredients together in a bowl. Beat sugar, oil, eggs, lemon zest, and vanilla together. Mix in zucchini and sweet potato, and then add dry ingredients and nuts, mixing well. Spread mixture into pan and bake 20-30 minutes, or until they test done with a toothpick. Cool completely.
- Cream butter and sugar together with electric mixer. Add 1 cup of sugar and the orange juice, and beat until creamy. Add remaining sugar. Beat in lemon juice, orange extract, and grated zest. Add the sherry and beat until smooth. Spread on bars. Cut into bars once icing is set.
