Cranberry Oat Bars
- 3 cups rolled oats
- 2 very ripe medium bananas
- 1 cup unsweetened applesauce
- 1/2 cup dried unsweetened cranberries
- 1/2 cup water
- 1/4 cup flaxseeds
- 6 tbsp liquid egg whites
- 2 tbsp vanilla extract
- 1 tbsp chia seeds
- dash of salt
- optional:
- 1/4 cup thompson raisins (not included in nutritional info above)
- 1. Pre-heat the oven to 400 degrees.
- 2. Blend all of the ingredients together until well blended.
- 3. Line a 9 inch x 9 inch baking dish with parchment paper. Note: Use cooking spray to ensure the parchment paper adheres to the dish.
- 4. Spread the mixture evenly in the dish atop the parchment paper.
- 5. Bake for 20-25 minutes or until top is light golden brown.
- 6. Let the pan cool for approximately 15 minutes.
- 7. Cut into squares.
- 8. Store extras in the refrigerator after they fully cool.
