Cheesecake
- 5 pkgs (8oz each) cream cheese
- 1 3/4 cup sugar
- 3 tbsp all-purpose flour
- 1/4 tsp salt
- Grated rind 1 lemon
- 5 egges
- 2 egg yolks
- 1 tbsp vanilla
- 1/4 cup heavy cream
- Make graham cracker crust according to directions on graham cracker crumbs box.
- Beat cheese until soft.
- Mix sugar, flour and salt;
- gradually blend into cheese, keeping mixture smooth.
- Add grated lemon rind.
- Add eggs and egg yolks, one at a time, beating thoroughly after each.
- Blend in cream.
- Pour into pan.
- Bake in preheated very hot oven (475 degrees) for 15 minutes.
- Reduce heat to very slow oven (225 degrees) and bake 1 hour longer.
- Turn off heat and leave cake in oven for 15 minutes.
- Remove from oven and let stand on cake rack away from drafts until cold.
- Chill.
- When ready to serve, remove sides of pan.
- Cake will shrink some as it cools.
