German Apple Pancake Featuring Virtue Cider “The Mitten”
- 1 1/3 cups All-Purpose Flour
- 1 1/3 cups Milk
- 1/4 cup Virtue Cider "The Mitten"
- 3 Eggs
- 3 tablespoons Sugar
- 1 teaspoon Vanilla Extract
- 2 tablespoons Unsalted Butter, Melted
- 3 Granny Smith Apples, Peeled and Sliced Thin
- 2 teaspoons Cinnamon
- 1/2 cup Sugar
- 1 teaspoon Nutmeg
- 3 tablespoons Unsalted Butter, Melted
- 1 teaspoon Vanilla Extract
- 1/2 teaspoon Salt
- Preheat oven to 425 degrees F, heat one ovenproof omelet pan or a cast iron skillet
- For the batter, combine milk, Virtue Cider "The Mitten", eggs, vanilla, and add the flour until smooth
- Slowly incorporate melted butter into the batter and set aside
- For the apples, combine apples, cinnamon, sugar, nutmeg, vanilla, butter, salt in a separate bowl, set aside
- Remove skillet from oven, add 3 TB of melted butter to pan
- Add the apple mixture and caramelize for 4-5 minutes until golden; top with the batter
- Bake in oven about 35 minutes or until pancake puffs on the top
- Remove from oven and immediately flip onto a large serving plate
