Jerk Chicken
- 1 tbsp ground allspice
- 1 tbsp dried thyme
- 1 1/2 tsp dried chili flakes
- 1 1/2 tsp ground pepper
- 1 1/2 tsp ground sage
- 3/4 tsp nutmeg
- 1/2 cup Orange Juice
- juice of 1 lime
- 1 cup chopped onion
- 3/4 tsp cinnamon
- 1 tbsp salt
- 2 tbsp garlic powder
- 1 tbsp sugar
- 1/4 cup olive oil
- 1/4 cup soy sauce
- 3/4 cup white vinegar
- 1-4 scotch bonnet peppers (1 for mild, 4 for hot) seeded and chopped
- 3 green onions, chopped
- 6 boneless skinless chicken breasts
- combine dry ingredients, whisk in oil, soy sauce, vinegar, OJ, and Lime juice. stir in hot peppers and onion.
- Add chicken, marinade for at least 4 hours or overnight
- Preheat BBQ to medium, and grill chicken for about 6 minutes on each side or until cooked through, basting with additional marinade while cooking.
- Bring left over marinade to a boil for several minutes and spoon over chicken before serving.
