Feta Shrimp
- 1 1/2 pounds medium to large shrimp, cleaned and deveined
- Juice of 1 lemon
- 1/2 cup olive oil
- 1 bunch spring onions, sliced thinly
- 2 cloves garlic, finely chopped
- dash of crushed red pepper
- 3 tomatoes, chopped
- 1/2 cup water
- 2 tsps dried oregano
- 1 cup feta cheese, crumbled
- 1/4 cup ouzo liquor (black licorice flavour)
- salt and pepper
- 1/2 cup fresh parsley, chopped
- Place the shrimp in a shallow dish and sprinkle with lemon juice and set aside.
- Heat the olive oil over medium heat in a large skillet. Add the onions, garlic and crushed red pepper and heat until wilted. Add the tomatoes and water and simmer for 15 - 20 minutes.
- Drain the shrimp and add to the skillet together with the oregano, feta, ouzo and pepper and cook for about 3 - 5 minutes till the shrimp turn pink.
- Remove from heat and season with salt and additional pepper to taste and sprinkle with fresh parsley just before serving.
