Kentucky Hot Browns(Serves 4)

  1. Melt 1/3 cup butter; add onion and cook until tender.
  2. Add flour and blend until smooth.
  3. Add milk, salt and crushed red pepper.
  4. Stir in eggs, processed cheese and 1 tablespoon butter. Cook until almost boiling, stirring constantly.
  5. Do not boil. Remove from heat.
  6. In individual plates or 1 large serving dish, arrange toast; lay turkey breast on it.
  7. Cover with the sauce.
  8. Add bacon/country ham to top.
  9. Sprinkle with Parmesan cheese and paprika.
  10. Place under broiler until sauce begins to bubble.
  11. Serve at once.
