Kentucky Hot Browns(Serves 4)
- 1/3 c. butter
- 1 medium onion, chopped
- 1/3 c. flour
- 3 c. milk
- 1 tsp. salt
- 1/2 tsp. crushed red pepper
- 2 eggs, beaten
- 1/4 lb. processed cheese (chunks)
- 1 Tbsp. butter
- 4 strips bacon or country ham, cooked
- sliced turkey breast
- Parmesan cheese
- paprika
- 4 pieces toast
- Melt 1/3 cup butter; add onion and cook until tender.
- Add flour and blend until smooth.
- Add milk, salt and crushed red pepper.
- Stir in eggs, processed cheese and 1 tablespoon butter. Cook until almost boiling, stirring constantly.
- Do not boil. Remove from heat.
- In individual plates or 1 large serving dish, arrange toast; lay turkey breast on it.
- Cover with the sauce.
- Add bacon/country ham to top.
- Sprinkle with Parmesan cheese and paprika.
- Place under broiler until sauce begins to bubble.
- Serve at once.
