Shrimp Gumbo
- 1 TBSP olive oil
- 3 large Spanish Onions
- 2 cloves garlic
- 1 Small can tomato sauce
- 1 14 oz can stewed tomatoes
- 2 cups water
- 1 lb. Spicy Sausage - Andouille, Parker Brothers, etc., sliced thin
- 1 16 oz bag frozen, cut okra
- 1 Bay leaf
- Pinch of Hot Pepper flakes
- Salt & pepper to taste
- 2 lbs. raw medium shrimp, shelled and deveined
- 1-2 lbs crab legs (optional)
- Heat the olive oil in a large pot. Saute the onions briefly in the pot to coat with oil. Add the next 8 ingredients, including the spices to the pot. Bring to a boil, and simmer for 1-2 hours, up to 8 hours. 15 minutes prior to serving, add shrimp and crab legs if using. Cook thoroughly before eating.
- Enjoy with white rice and corn bread.
