Cauliflower Shepherds Pie
- 1 lb Lean Ground Beef
- 1 tsp cayenne pepper
- 4 Tbsp Butter
- 1/2 onion, chooped
- 4 cups of frozen vegetables (green beans, broccoli, carrots)
- 3 eggs
- 4 oz can of tomato sauce
- 3/4 cup fat free shredded cheddar cheese
- 1 1/2 lbs cauliflower
- 2 tbsp garlic
- chives
- Brown ground beef in a pan with onion, garlic and cayenne pepper. Add tomato sauce. Place 1/2 of mixture in bottom of casserole dish. Add vegetables as next layers, then the rest of beef mixture. Whisk 3 eggs and pour on top. Spread cheese over all.
- Microwave cauliflower for 10 minutes with small amount of water. Puree with 4 tbsp butter and 1/2 tsp salt. Pour on top of casserole. Bake 30 minutes at 400 degrees or until golden brown
