Shellfish Stew
- 1/4 lb. bacon, cut in pieces
- 1 large onion, chopped
- 1 medium green pepper, chopped
- 10 oz. frozen mixed veggies
- 1 (28 oz.) can whole tomatoes
- 2 large potatoes, scrubbed and diced
- 3/4 tsp. salt
- 1 clove minced garlic
- 1 tsp. oregano
- 1/4 tsp. pepper
- 8 oz. shrimp, chopped
- 8 oz. oysters, diced
- 8 oz. clams, diced
- 4 to 5 mushrooms, sliced
- Cook bacon; then add
- onion and green pepper.
- Continue cooking until light brown.
- Add tomatoes and 1 1/2 cups water. Add potatoes, salt, garlic,
- oregano
- and
- pepper.
- Simmer
- 20 minutes or until potatoes
- are
- tender.
- Add veggies and mushrooms;
- cook about 10
- minutes.
- Put
- in
- shrimp,
- oysters and clams.
- Bring to a boil and cook another 5 to 10 minutes.
