Turkey Meatloaf With Bacon
- 2 tablespoons extra-virgin olive oil plus additional for brushing
- 2 cups 1/3-inch cubes crustless bread
- 3/4 cup low-salt chicken broth
- 1/2 cup bbq sauce
- 2 large eggs, lightly beaten
- 1/4 cup minced shallots
- 3 tablespoons chopped fresh Italian parsley
- 1/2 cup finely chopped red pepper
- 2 teaspoons coarse kosher salt
- 1/2 teaspoon ground black pepper
- 1 1/2 pound ground turkey
- 7 slices thick-cut bacon, 5 coarsely chopped, 2 cut in thirds
- - Preheat oven to 375u0b0F. Brush 8 1/2 x 4 1/2 x 2 1/3-inch loaf pan with olive oil.
- - Toss bread with broth and bbq sauce in large bowl. Let stand until bread softens, about 10 minutes.
- - Mix in eggs, shallots, parsley, red pepper *optional*, coarse salt and pepper.
- - Add turkey and chopped bacon; mix just until blended. Transfer to pan, mounding in center.
- - Lay bacon thirds across loaf.
- - Bake until thermometer inserted into center registers 170u0b0F, about 45-60 minutes. Let rest 15 minutes before serving.
