Park City Chicken
- 3 tbl. Olive Oil
- 1 tbl. Unsalted Butter
- 1 Large Onion (1/4 chopped, 3/4 sliced)
- 1 1/2 cups Brown Rice
- 3cups chicken broth
- 1 1/2 pounds boneless skinless chicken tenders
- 1 tablespoon Montreal Steak seasoning
- 1 clove garlic
- 1red, 1 yellow, 1 orange pepper, chopped
- 3 tablespoons chipotle in adobo sauce
- 1 tablespoon ground cumin
- 2 tablespoons honey
- 1/4 cup real maple syrup
- 1 cup cashews
- Cook rice in rice cooker
- While the rice cooks, make the chicken. Heat a large skillet over high heat, add remaining 2 tablespoons vegetable oil, then the chicken. Season the chicken with steak seasoning (do that before putting in skillet lightly brown chicken, move to side of skillet,add remaining onions, garlic,and bell peppers. cook 3to 5 minutes then mix chicken and veggies together and add chipotles and cumin, toss to coat. glaze the mixture with syrup and honey. add the chopped nuts on top. serve over rice
