Farmers Market Rice Salad
- 4 servings of white minute rice
- (follow directions on box), cooked,and chilled
- 1 medium cucumber,peeled and diced
- 1 medium red bell pepper, seeded and diced
- 1 bunch green onions (with about 2" of green), chopped
- 1 medium-hot banana pepper, seeded and diced
- 3 slices deli roast beef, diced
- 12 medium black olives, halved
- 4 oz. crumbled blue cheese
- salt and pepper to taste
- Balsamic vinaigrette dressing-on the side.
- In a large saucepan, cook rice according to package directions. Drain if necessary. Chill while preparing vegetables.
- Peel and dice cucumber. Seed and dice red bell pepper. Chop green onions, with 2" of green tops. Seed and dice medium-hot pepper. Roll each slice of deli roast beef tightly and dice thinly. You can also then tear each diced piece to make smaller pieces if you want. Halve the black olives. Add the crumbled blue cheese. Add salt and pepper to taste. Toss thoroughly with the chilled rice, and chill at least 30 minutes. Each person may add their own dressing.
