Chili Biscuits
- 2 1/2 lb. hamburger
- 1 c. onion, chopped fine
- 1/4 c. Crisco
- 1/4 c. chili powder
- 2 Tbsp. ground cumin
- 2 tsp. salt
- 2 tsp. pepper
- 1 Tbsp. garlic powder
- 1 Tbsp. paprika
- 1 Tbsp. Accent
- 3 c. boiling water
- Put hamburger in heavy saucepan with tight lid; cook until tender, about 40 minutes in its own juice, stirring often.
- Saute onion and Crisco.
- Add chili powder, cumin, salt, pepper, garlic powder, paprika and Accent.
- Add the onion and seasonings to steamed meat.
- Add 3 cups of boiling water and stir well.
- Cover and allow to simmer 20 minutes.
- Cook and fill top of biscuits with chili mixture.
- Sprinkle Cheddar cheese over top of chili biscuits.
- Put in oven long enough to melt cheese.
- Makes 5 dozen.
