Cheddar Quiche
- 1/2 lb. Cheddar cheese
- 1 can (3 1/2 oz.) French fried onions
- 1/2 c. chopped celery
- 1/2 c. chopped green pepper
- bacon, fried and broken
- 5 eggs
- 2 Tbsp. Mr. Mustard
- 1 3/4 c. milk
- 3/4 c. shredded Cheddar cheese
- Make your own crust or buy ready-made crust and prepare as directed.
- Cut cheese in
- 6
- to
- 8 slices (3 x 4 x 1/8-inch thick).
- Cover bottom
- of
- pie
- shell
- with cheese overlapping slices.
- Set asidet/2
- cup
- French
- fried
- onions;
- sprinkle remainder over cheese.
- Sprinkle
- on
- celery, green pepper and bacon.
- In a
- mixing bowl beat together eggs and mustard until blended;
- add milk.
- Pour
- into pie shell;take approximately 45 minutes ortntil
- a
- knife
- inserted near center comes out clean. Remove pie
- from
- oven,
- sprinkle with 3/4 cup cheese. Allow to stand 20 minutes before serving.
- Meanwhile, heat 1/2 cup of the reserved
- onions
- in
- oventntil crisp and golden brown. Garnish top
- with onions. Cut pie in generous wedges to serve.
