Cheddar Quiche

  1. Make your own crust or buy ready-made crust and prepare as directed.
  2. Cut cheese in
  3. 6
  4. to
  5. 8 slices (3 x 4 x 1/8-inch thick).
  6. Cover bottom
  7. of
  8. pie
  9. shell
  10. with cheese overlapping slices.
  11. Set asidet/2
  12. cup
  13. French
  14. fried
  15. onions;
  16. sprinkle remainder over cheese.
  17. Sprinkle
  18. on
  19. celery, green pepper and bacon.
  20. In a
  21. mixing bowl beat together eggs and mustard until blended;
  22. add milk.
  23. Pour
  24. into pie shell;take approximately 45 minutes ortntil
  25. a
  26. knife
  27. inserted near center comes out clean. Remove pie
  28. from
  29. oven,
  30. sprinkle with 3/4 cup cheese. Allow to stand 20 minutes before serving.
  31. Meanwhile, heat 1/2 cup of the reserved
  32. onions
  33. in
  34. oventntil crisp and golden brown. Garnish top
  35. with onions. Cut pie in generous wedges to serve.
