Steak Sandwich - Filet A La Hero

  1. Make Marinate:
  2. Finely mince garlic. Stir together minced garlic, soy sauce, worcestershire sauce, orange juice, sesame oil, chile paste, cumin, and black pepper.
  3. Clean tenderloin removing all fat and silver skin. Cut tenderloin into cubes approximately 1-1/2" square.
  4. Add beef to marinate in gallon sized zip lok bag. Allow to marinate at least 2 hours, preferably 4 to 6 hours.
  5. Prepare Topping:
  6. Julienne Onions, Poblanos and Bell peppers.
  7. Saute onions in canola oil over medium heat. When onions begin to carmelize add chiles and peppers. Continue to saute until onions are nicely carmelized and peppers are soft - this will take about 20 minutes. Add salt and pepper to taste.
  8. At this point we generally let the onion pepper mixture cool, and fill a quart food container with it to be reheated at the game.
  9. Soak about 12 wooden skewers in water for about an hour. Bring these skewers to the game - packed in water if possible.
  10. Beef can be skewered either at home or while tailgating - we generally leave the meat in the marinate until we are at the game and skewer there.
  11. At the game:
  12. 1. Fire up grill
  13. 2. Skewer meat if not already done
  14. 3. Pour onion pepper mixture into disposable aluminum container pan
  15. 4. Skewered meat goes onto grill - depending upon size of meat cubes and grill temperature cooking will take about 2 minutes each side. Do not overcook - tenderloin is best served with a pink middle!
  16. 5. Place aluminum container onto grill to heat onion pepper mixture - stir frequently to prevent burning.
  17. 6. Slice hero rolls and extract some bread from the center.
  18. 7. Place cooked beef skewer on hero roll. Tightly close roll and extract skewer. Reopen hero roll and top beef with warmed onion pepper mixture.
  19. 8. Eat and enjoy! Women have been known to eat these beef skewers without the hero bread - no extra calories! Typical sides include: shrimp cocktail, pasta salad or sesame noodles, cucumber salad, coleslaw, pickles,grilled ears of corn.
