Spinach Artchoke Bites
- 1/2 cup scallions
- 1 package of frozen artichokes, thawed and drained rough chopped
- 2 tablespoons diced shallots
- 2 packages of frozen spinach, thawed and drained (get out as much of the water as possible)
- 6 large eggs beaten (or egg substitue)
- 8 ounces Mozerella Cheese
- 8 ounces Monterey jack cheese 1/2 cup of grated parm cheese
- 2 tablespoons dried parsley
- 3 tablespoons flour
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper
- 2 tablespoons olive oil
- Preheat oven to 350 degrees
- In sauce pan saute green onions for a few minutes till soft, then add shallotsfor about 30 seconds.
- In large bowl wisk eggs, parm cheese, parsley, salt, pepper, crushed red pepper, then fold in shredded cheese, artichokes and spinach.
- Prepare a baking dish that has been sprayed with oil that would allow the mixture to be about an inch or so high.
- Bake until set and slightly browned on top usually about 20 to 30 min.
- Cool slightly, cut into squares or triangles etc.
- Cool completely then place on cookie sheet in freezer for about an hour, once firm then put into freezer bags and freeze until ready to cook.
- I reheat them at 300 degrees for about 10 to 15 min in the oven until they are warm.
