Spinach Artchoke Bites

  1. Preheat oven to 350 degrees
  2. In sauce pan saute green onions for a few minutes till soft, then add shallotsfor about 30 seconds.
  3. In large bowl wisk eggs, parm cheese, parsley, salt, pepper, crushed red pepper, then fold in shredded cheese, artichokes and spinach.
  4. Prepare a baking dish that has been sprayed with oil that would allow the mixture to be about an inch or so high.
  5. Bake until set and slightly browned on top usually about 20 to 30 min.
  6. Cool slightly, cut into squares or triangles etc.
  7. Cool completely then place on cookie sheet in freezer for about an hour, once firm then put into freezer bags and freeze until ready to cook.
  8. I reheat them at 300 degrees for about 10 to 15 min in the oven until they are warm.
