Beefsteak Pizzaiola
- 3 lb. flank steak (2-inches thick)
- 6 Tbsp. olive oil
- 2 large cans tomatoes, chopped
- 1 medium onion, sliced
- 4 cloves fresh garlic, crushed and minced
- 1 lb. fresh mushrooms (whole)
- 1/4 c. dry red wine
- 1/4 c. dry, crushed oregano
- 1 tsp. dried, crushed basil
- 1 medium bell pepper, chopped
- salt and black pepper to taste
- While flank steak is partially frozen, slice into 1/4 x 2-inch strips. Allow to completely thaw.
- Heat oil in a large skillet until almost smoking.
- Sear steak on both sides.
- Add onion, garlic, tomatoes, bell pepper and herbs.
- Simmer, covered, for 1 hour, adding water if liquid boils off. Add mushrooms and wine. Continue to simmer until mushrooms are cooked. Serve with white rice.
- Serves 6 people.
