Justin'S Healthy Salad
- 1/2 english cucumber
- 1 red pepper
- 1 yellow or orange pepper
- 1/2 red onion thinly sliced
- 1/2 cup thinly sliced carrots
- 2 or more tomatoes
- 2 avocados
- sections from 2 navel oranges, or 1 can mandarin oranges
- 1/2 cup sliced snow peas
- 1/2 cup bean sprouts
- 5 ozs goat cheese
- 1/2 cup toasted almond slices
- salt and freshly ground pepper
- olive oil
- Slice or largely dice cucumber, red and yellow peppers, tomatoes.
- Toss with onion, carrots, snow peas, orange sections, sprouts,
- This part can be prepared ahead of time.
- Just before service, add diced avocados, goat cheese and almonds.
- Sprinkle with salt and pepper, drizzle with olive oil.
