Fruit Compote

  1. Heat a medium sized pot and caramelize the brown sugar over medium heat. Just as the sugar begins to dissolve and darken, pour in the fruit except for the banana. Occasionally stir around the fruit for about 10-12 minutes, don't worry if you see some of the sugar harden as you stir, it will melt eventually. As the fruit begins to soften, it should start turning a nice dark, ruby red and you'll notice more and more liquid begin to show itself in the pot. Pour in the honey and bananas and stir. After about 5 more minutes the thinner liquid should now become thicker as it bubbles, almost syrup like. Pour in the Grand Marnier and stir again. After you reach the desired thickness, the dish is complete. Serve hot preferable as a crepe filling.
