Watermelon, Blueberry, Spinach Salad With Feta
- 2 tbspn lemon juice
- 2 tbspn lime juice
- 2 tbspn honey
- 8 cups lightly packed spinach leaves
- 4 cups 1/2 inch cubed watermelon
- 2 cups blueberries well rinsed and patted dry
- 1 cup thin seedless cucumber slices
- 1 cup thin vertical slivers red onion
- 1 cup crumbled feta cheese
- Whisk the lemon, lime juices and honey in a large bowl until blended. Add the spinach and toss lightly to coat. Add the watermelon cubes, blueberries, cucumber and red onion; toss to combine. Distribute salad among 8 plates and sprinkle each with feta. I have also combined feta with salad and let others serve themselves for picnics.
