Greek Lamb Delite

  1. trim lamb chops and cut into small bite size pieces, and in a large bowl, Add lamb, potatoes, and onions, then pour 1 whole bottle of greek dressing to ingredients, and two tablespoons of greek seasoning and mix well,then marinade overnight in fridge.
  2. The next evening, put everything in bowl that was in fridge in a roasting pan and spread lamb mixture to even level in pan and cover with foil.
  3. Bake at 350 degrees for 45 minutes
  4. remove pan, take off foil, and stir ingredients again, then put back in oven uncovered at 400 degrees for 15 minutes.
  5. then remove from oven,and scoop out lamb mixture into a large salad bowl, leave cooked dressing to discard when ever you like.
  6. let meat, potatoes & onions cool down to room temperture, (About 20 minutes in fridge)
  7. Then tear lettuce by hand into small pieces, add to bowl, add jar of chopped sun dried tomatoes with oil, stir
  8. add baby spinach & chopped mushrooms & olives
  9. mix all up.
  10. Let everyone put it in sald bowls to eat, add more greek dressing if needed and sprinkle feta cheese on each salad.
  11. Serve with garlic bread
