Greek Lamb Delite
- 6 lamb chops
- 2 pounds very small new potatoes
- 1 jar pearl onions
- 1 jar sun dried tomatoes in oil
- 1 bottle greek dressing
- 3 ounce of greek olives (pitted)
- Romaine lettuce
- fresh baby spinach
- fresh button mushrooms
- cavenders greek seasoning
- feta cheese
- trim lamb chops and cut into small bite size pieces, and in a large bowl, Add lamb, potatoes, and onions, then pour 1 whole bottle of greek dressing to ingredients, and two tablespoons of greek seasoning and mix well,then marinade overnight in fridge.
- The next evening, put everything in bowl that was in fridge in a roasting pan and spread lamb mixture to even level in pan and cover with foil.
- Bake at 350 degrees for 45 minutes
- remove pan, take off foil, and stir ingredients again, then put back in oven uncovered at 400 degrees for 15 minutes.
- then remove from oven,and scoop out lamb mixture into a large salad bowl, leave cooked dressing to discard when ever you like.
- let meat, potatoes & onions cool down to room temperture, (About 20 minutes in fridge)
- Then tear lettuce by hand into small pieces, add to bowl, add jar of chopped sun dried tomatoes with oil, stir
- add baby spinach & chopped mushrooms & olives
- mix all up.
- Let everyone put it in sald bowls to eat, add more greek dressing if needed and sprinkle feta cheese on each salad.
- Serve with garlic bread
