Southern Country Captain
- 3/4 cup flour
- 1 1/2 t salt
- 1/2 t fresh ground pepper
- 6-8 chicken breast
- 5 to 8 Tbs butter
- 3/4 cup chopped onion
- 3 bell peppers of different colors, chopped, (1 red, 1 green and 1 yellow or any combo of colors)
- 2 cloves garlic, minced
- 4 Tbs curry powder
- 1 t thyme
- 2 16oz cans diced tomatoes
- 1 handfull of dried cranberries
- Mix flour, salt and pepper. Toss chicken in flour mixture. Melt butter in large skillet. Brown coated chicken on all sides in butter. Remove chicken to side plate but don not clean the skillet. Add onion, bell peppers, garlic, curry, and thyme to the skillet.Saute until they are soft and start to release juice. Stir in tomatoes and cranberries. Place the browned chicken back in the skillet. Push the chicken into the vegetable mixture so it is covered. You want the flavor to soak into the chicken.Set stove to med-low and simmer for 30 minutes to an hour.
