Potato-Bacon Salad
- 5 pounds potatoes boiled to fork tender, cooled and peeled
- 1 small head celery
- 1 pound bacon cooked to very crispy but not burnt
- 1 onion med size
- 1 dozen eggs boiled, cooled and peeled
- 1 green pepper
- mayonaise not miracle whip!!
- Add all ing. into a large bowl as follows: After boiling, cooling and peeling potatoes, cut into small chunks. Cut up onion, pepper, eggs,and celery into desired pieces. (Leave 1-3 eggs out to slice on top of salad) Add approx 1-2 cups mayonaise or to taste. Add less to start with more if needed. (I use my hands to mix everything up and to squish up some of the potates. My preference) After all is mixed add bacon and mix that into salad. Place salad into bowl that you will be serving from. Slice eggs on top. Sprinkle with paprika if desired. Chill for at least 3-4 hours or overnight if possible.
