Irish Soda Bread
- 2 c. brown flour
- 2 c. white flour
- 1 Tbsp. wheat germ
- 1 Tbsp. bran
- 2 tsp. baking powder
- 2 tsp. baking soda
- 1 tsp. sugar
- pinch of salt
- 2 to 2 1/2 c. buttermilk
- 1 egg (if desired)
- 2 oz. margarine
- Preheat oven to 375u0b0.
- Sieve flour, baking powder and soda in a bowl.
- Add wheat germ and bran, sugar and salt and mix all together.
- Crumb in margarine or butter.
- Make a well in the center of bowl and pour in buttermilk (and beaten egg); mix well, until mixture is one large piece of dough.
- Sometimes extra buttermilk may be needed.
- Turn onto greased tin.
- Press down until required shape is obtained.
- Make a cross on dough with a knife and brush top with a little milk.
- Bake for 45 minutes. Test with a skewer.
