Berry Shortbread
- Crust
- 1/2 lb butter
- 1/2 cup light brown sugar
- 1/2 cup granulated sugar
- 1/2 tsp salt
- 1 tsp vanilla
- 1 3/4 cup flour
- 1/2 cup ground almonds or pecans
- 1/4 tsp nutmeg
- 1/3 tsp cinnamon
- Filling
- 3/4 cup strawberry, raspberry or blueberry jam
- 1 cup fresh berries (sliced)
- zest of lemon
- Cream butter, sugar, salt, vanilla. Stir in flours until soft dough forms. Divide into 2 balls. Press 1/2 into a 9x13 buttered baking pan and refrigerate 30 minutes.
- Stir jam, berries and lemon zest together. Add lemon juice to taste.
- Bake crust for 20 minutes at 325. Spread filling on crust, crumble remaining dough over the top. Bake an additional 45 - 50 minutes until beginning to brown.
