E Z E Zekiel Bread
- Ingredients
- 1 cup spilet flour
- 1/4 cup high gluten flour
- 1 1/2 cups bread flour
- 1 cup wheat berries
- 1/4 cup barley
- 1/4 cup brown rice
- 1/4 cup millet
- 1/4 cup dry lentils
- 1/8 cup dry great Northern beans
- 1/8 cup dry kidney beans
- 1/8 cup dried pinto or other beans, black beans are not recommended, to hard and makes the bread gray
- 4 cups hot water (155 or hotter)
- 1+ cup warm water (110)
- 1 cup honey
- 1/4 cup olive oil
- 2 (.25 ounce) packages active dry yeast
- 2 tsp salt
- Place the all beans in a blender and pulse until they are mostly broken.Then place all the whole grains in with the beans and pulse some more,but not to much. Place this mix in a large bowl with 4 cups hot water and let sit 1 hour. In a separate bowl mix 1 cup warm water, honey, olive oil, and yeast into a large bowl. Let sit 5 minutes. Add flours, salt,and the soaked bean & grain mixture stir well, about 10 minutes with a mixer and dough hook. Add more water as needed The dough should be like that of a batter or quick bread. Pour dough into two greased 9 x 5 inch loaf pans.
- Let rise in a warm place for about 1 hour, or until dough has reached the top of the pan.
- Bake at 350 degrees F for 45 to 50 minutes, or until loaves are golden brown.I use a gas convection oven, so you may neat to check your bread with a clean tooth pick
